Winter vegetables require patience and some understanding of plant physiology. Massage the kale with vigor for 10 minutes with olive oil 24 hours ahead of serving it. Dress it 30 minutes ahead and plate it right before serving.
For the dressing, emulsify a cup of Greek yogurt with a quarter cup of pomagranate molasses and a quarter cup of extra virgin olive oil. Add crushed feta cheese for extra creaminess.
